Episode 32: Steakhouse Dinner Searing Comparison

We wanted to compare our original idea of how searing works with a different method from Cooks Illustrated to see if they could change our minds about how we should sear our meat. And it does! This easy low mess method will change your life!
The bare bones steps:
Crank on your burner to medium high heat.
Place your item to be sear in a non-stick pan (we’ve successfully done veggies, steak and salmon!) then place the pan ont he burner.
Flip your item every 2 minutes until fully cooked.
Gretchen’s Lemon Caper Vinagrette
2 Tablespoons Lemon Juice
2 Tablespoons Shallots, Minced
1 Tablespoon Capers, Lightly Chopped
1 Tablespoon Dijon Mustard
1/2 Cup Extra Virgin Olive Oil
Mix the lemon juice, minced shallot, capers, and dijon mustard together.
While whisking, drizzle in the olive oil until all is added. Season with salt and pepper.
Express Baked Potato
Scrub the potato and cut a slice down one of the long sides of the potato. Rub with butter or oil. Cook in your microwave for at least 8 minutes. You can finish completely in the microwave or pop them into the oven to finish them off.
