We’re FINALLY back in the kitchen! Check out our second take of these mouth-watering Black Bean Burgers.
Our Suggestions:
Gretchen thinks she prefers pan frying the patties vs grilling them. We have yet to try baking them in the oven.
For sure try topping these with tortilla strips, Pepperjack Cheese and any sort of Jalepeno Relish you’d like, our recipe below features corn.
Jalepeno Relish
Enough for 2 Burgers, plus some extra, or if you’re like Gretchen, serves one as a veggie side dish
1 Ear Corn, Kernels removed from the ear, or 3/4 C Frozen Corn
1 Shallot, chopped
1 Small Tomato, chopped
1/4 Head Green Cabbage
1 Jalepeno, Deseeded
1 T Salt
Black Pepper, as needed
1.5 t Mustard Seeds
1 t Sugar
2 T White Vinegar
Heat a pan over medium heat, and toast the mustard seeds until fragrant.
Add the remaining ingredients and cook until liquid is reduced to your preferred level.
