We’re FINALLY back in the kitchen! Check out our second take of these mouth-watering Black Bean Burgers.

Our Suggestions:

  • Gretchen thinks she prefers pan frying the patties vs grilling them. We have yet to try baking them in the oven.

  • For sure try topping these with tortilla strips, Pepperjack Cheese and any sort of Jalepeno Relish you’d like, our recipe below features corn.

Jalepeno Relish

Enough for 2 Burgers, plus some extra, or if you’re like Gretchen, serves one as a veggie side dish

1 Ear Corn, Kernels removed from the ear, or 3/4 C Frozen Corn

1 Shallot, chopped

1 Small Tomato, chopped

1/4 Head Green Cabbage

1 Jalepeno, Deseeded

1 T Salt

Black Pepper, as needed

1.5 t Mustard Seeds

1 t Sugar

2 T White Vinegar

  1. Heat a pan over medium heat, and toast the mustard seeds until fragrant.

  2. Add the remaining ingredients and cook until liquid is reduced to your preferred level.
