Ingredients
2 pounds Chicken Wings
2 teaspoon baking powder
Fine sea salt
¼ cup unsalted butter
2 teaspoon poppy seeds
2 teaspoon red chili flakes
1 teaspoon ground cumin
1 teaspoon ground black pepper
¼ cup pomegranate molasses
¼ cup prepared mustard
2 Tablespoons Brown Sugar

Steps in Detail
To prepare the wings, place a wire rack over a sheet pan. Toss the wings with the baking powder and salt and arrange in a layer on the rack and put into the fridge to allow the skin to dry out over night and allow the baking powder to be absorb into the skin.
Preheat the oven to 450 Degrees.
Clean any juices from the wings that may have dripped onto the sheet pan, and put into the oven. Roast for 15-20 minutes on one side and then flip and roast for an additional 15-20 minutes until golden and crispy. Remove from the oven and place into a large bowl.
Heat the butter in a small pan until frothy, remove from the heat and add the poppy seeds, chili flakes, cumin, and black pepper.
Mix the pomegranate molasses and mustard in a heat resistant bowl, add the spiced butter and mix well.
Pour half the sauce over the wings and toss well. Serve the wings with the remaining sauce on the side.
