Grapefruit Soda With Chai Masala - Page 120 - The Flavor Equation

Ingredients 

1.5 cups water

½ cup Sugar

2 in piece ginger peeled and cut into thin slices

1 in cinnamon stick

10 whole black peppercorns

2 whole green cardamom pods, cracked

1 Star Anise

2.5 C grapefruit juice (5 grapefruit that I grew)

4.5 C chilled club soda

Steps in Detail 

  1. Combine water, sugar and spices together in a medium saucepan, bring to a boil over medium high heat and immediately remove from the heat. Cover with a lid and steep for 10 minutes.

  2. Strain the syrup through a fine mesh stainer. Chill completely before use.

  3. Combine simple syrup with the grapefruit juice.

  4. Over ice in a cup, use a ½ c grapefruit syrup mixture and top with club soda.

  5. Leftover syrup mixture will keep for 1 week in the fridge.
