This delightful dish came together in the end with corn 2 ways! The Soup was creamy and deeply corn flavored and the popcorn truffly and rich.
If you strip the corn from the cobs, make stock from the cobs for an extra hit of corn flavor.
Cannot recommend enough using brown butter on your popcorn. This amazing new discovery in popcorn toppings might be better than Gretchen’s other favorite: Duck Fat.
Microgreens could be a delightful addition to this soup as suggested by the source recipe.
