Cocktail hour - what’s on our minds

Lets Learn about Salt :

World Wide, Salt is produced in equal amounts from sea water and from mining the deposits that come from prehistoric seas that were gradually cut off from the wider oceans and then eventually evaporated and then were covered over by various geological “processes”

In the US 95% of our salt is mined. Thus why I did not have much experience with sea salt until culinary school. s

To make your own you need to be able to get rid of the “bitter” minerals. This is usually done by dissolving the salt and then adding sodium hydroxide and carbon dioxide, which will cause the magnesium and calcium to precipitate out of the brine.

The chemicals will precipitate out during long solar drying before the sodium chloride will crystalize.

Table salt is the densest salt and is the slowest to dissolve. Which is why it is not recommended to cook with. There is also usually anti-caking agents added and these do not dissolve at all and will cause cloudiness.
